How to fry chicharros:
Clean them (removing guts) and rinse thoroughly. There is no need to remove bones. Heads can be left intact. Salt chicharros and put in fridge until ready to cook. Coat each chicharro in corn flour and fry in a large electric skillet with vegetable oil (outside, of course). To accompany the fish, boil small red bliss potatoes or baby new potatoes in plenty of salted water, garlic and an onion cut in half. Slit each potato. When they are fork tender, remove from the water, place in a dish and put a little red crushed pepper (the Portuguese wet crushed pepper, “pimenta moida”) in the slit of the potato.
